The Kebab Bureau was born from a single obsession: the perfect char. We traced kebab traditions across Turkey, Iran, Lebanon, and the Levant to understand what makes flame-cooked meat transcendent — and brought those lessons home to Washington, DC.

Every cut is sourced from regional farms. Every spice blend is mixed in-house, building on generations-old recipes refined through our own lens. We don't chase trends. We master the craft.

Josh Patchus — lifelong kebab obsessive and veteran of the restaurant technology world — saw a gap in DC's dining scene and decided to do something about it. After years helping restaurants run smarter, he wanted to build one worth running. The Kebab Bureau is the result: a place where deep culinary passion meets operational excellence.

The Man Behind the Fire

Josh Patchus didn't come from a culinary dynasty. He came from a deep, genuine love of kebabs — the kind that starts with hunting down the best skewer in every city you visit, then evolves into a full-blown obsession with regional styles, spice science, and the alchemy of live fire.

Before opening The Kebab Bureau, Josh spent years immersed in restaurant technology — building tools, refining systems, and watching closely how great restaurants actually operate. He understood the gap between a good concept and a great dining experience, and what it took to close it.

When the moment was right, he combined his two passions into one: a kebab restaurant built with the precision of a tech operator and the soul of a true believer. The Bureau isn't just a restaurant. It's the project Josh was always going to build.
